Flowering kale — the strangest, most durable thing in the winter shop. Dense ruffled rosettes that look like an enormous peony and last, in a vase, for weeks rather than days.

Most people don’t know you can put kale in a bouquet. Then they see one, and it becomes the flower they ask for every winter. The texture does something no rose can — layered, sculptural, faintly unreal.
